Sweet Potatoes are life, RIGHT! They might not be life for everyone but they are for sure a nice addition to Whole30, just don’t over do it.  These little guys are packed full of the good stuff your body needs!

Whole30 Sweet Potato Salad

It’s so easy on a weeknight to chop or slice up a sweet potato to serve with your protein and greens, there are several way to go about a sweet potato, baked, roasted, etc. BUT, this is a little something different; a little fancy if you will!

This is also a great compliant salad that you can take to a pot luck or family dinner.  Feel free to tweak the herbs and spices, I fell like there are several ways to spin this salad.

Whole30 Sweet Potato Salad

Ingredients

  • 4 small or 2 large sweet potatoes (peeled and chopped)
  • 3 tbsp flat leaf parsley (chopped)
  • 3 green onion (chopped)
  • 4 cloves of fresh garlic (finely chopped)
  • 1/2 cup of Whole30 compliant mayo
  • 1 tsp smoked paprika
  • 1 tsp red pepper flakes
  • S&P to taste

Instructions

Boil the sweet potatoes until tender, drain, let cool.

Mix all ingredients in the cooled potatoes and fold together gently.

Serve cold or room temp.
