Whole30 Spicy Olive Oil Coleslaw
This goes out to all the mayo haters, AND I love you all! This is a delicious, spicy, BRIGHT coleslaw that is proud to be, mayo FREE!
Can this dish be any prettier! This is a fresh coleslaw that feels like summer in every bite! You will not want to make this dish much ahead of time because once it’s tossed in the dressing you really can’t refrigerate it because it is olive oil based.
You have a ton of flexibility with this coleslaw, it’s your canvas so get creative and add in other veggies!
TIP: Buy the shredded cabbage, it will be OK, I promise! It will not take your Betty Crocker card away.
Whole30 Olive Oil Coleslaw Add the shredded cabbage to a large mixing bowl. Chop/slice all veggies and add to the bowl. In a separate small mixing bowl or measuring cup add the olive oil, the juice from one lime, the cumin, the cayenne pepper, S&P (to taste) and whisk well. Pour the liquid over the cabbage and veggies and toss well, sit aside and serve at room temp within 15-minutes to half an hour. Enjoy! Love,
