Whole30 Red Potato Salad

Red Potato Salad is always a crowd favorite!

It’s requested I make this recipe ALL THE TIME for baby showers, housewarming party’s and such. OK, if you insist.  I’ve converted this potato salad into a Whole30 version and no-one ever knows (note: it contains raw egg so expecting mothers really shouldn’t eat it) I usually make a special batch for the moms to be!

Whole30 Red Potato Salad

This potato salad gets better and better in the fridge, so it’s make ahead friendly.  I usually make a batch as part of my meal prep when I have time and want to put more effort into my potatoes than just roasting them etc., and then just pull out a small serving with a couple of lunches or dinners during the week.

Whole30 Red Potato Salad

Ingredients

  • 15 red potatoes (chopped) Eyeball this, sometimes they are really small and sometimes pretty big. WHO ever knows!
  • 1 cup of Whole30 compliant mayo
  • 1/2 to 1 red onion, to taste (finely chopped)
  • 2 tbsp dried dill
  • S&P to taste

Instructions

Chop the potatoes into small bite size pieces.

Boil until tender, drain and let cool.

Once cool, mix all the ingredients together.

Serve cold or at room temp.
