Whole30 Red Potato Salad
Red Potato Salad is always a crowd favorite!
It’s requested I make this recipe ALL THE TIME for baby showers, housewarming party’s and such. OK, if you insist. I’ve converted this potato salad into a Whole30 version and no-one ever knows (note: it contains raw egg so expecting mothers really shouldn’t eat it) I usually make a special batch for the moms to be!
This potato salad gets better and better in the fridge, so it’s make ahead friendly. I usually make a batch as part of my meal prep when I have time and want to put more effort into my potatoes than just roasting them etc., and then just pull out a small serving with a couple of lunches or dinners during the week.
Whole30 Red Potato Salad Chop the potatoes into small bite size pieces. Boil until tender, drain and let cool. Once cool, mix all the ingredients together. Serve cold or at room temp. Love,
