I love Indian style food, it’s so warm and comforting.  Give me a really cold day and a bowl or this butter curry chicken and I am all set! Oh and maybe a good glass of red wine, yes!

One thing I love about making meals like this is that you just pop it in the slow cooker and it’s ready when you get home from work.  AWWWWWW  However, you can also do this in the Instant Pot.

This dish requires several spices, don’t be overwhelmed and yes, you do need to add everything in the ingredients list.  This spice blend is what makes this dish so warm and delicious.

Whole30 Butter Curry Chicken

Ingredients

  • 2 lbs of chicken breast (cubed into small pieces)
  • 1 medium sweet onion
  • 4 cloves of fresh garlic (minced)
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 tbsp curry powder (make sure it's a good quality curry powder)
  • 1 tsp turmeric
  • 1/2 tsp ground ginger or ginger paste
  • 1/2 cayenne
  • 1/2 cumin
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp almond flour
  • 16 oz coconut milk
  • 1/2 cup compliant chicken stock or broth
  • 6 oz tomato paste
  • chopped fresh cilantro
  • lime wedge
  • cauliflower rice
  • hand full or so of snow peas
  • thai spices cashews

Instructions

Wash and cut your chicken breast into small cubes

Sear the chicken breast in olive oil in a non-stick skillet over high heat. You're only looking for color, not fully cooked (cook in batches so you get the best sear)

Once the all chicken is seared, add to your slow cooker

In the same pan as you seared the chicken add a bit more olive oil and then cook your onions for 3-5 minutes, once they are almost cooked add in your minced garlic and cook for 2-minutes (stirring often so neither the onions or garlic burns), add to the slower cooker

Add in your chicken stock or broth

Add in all seasonings, almond flour and tomato paste

Cook for half an hour to an hour on high and then turn down to low and cook 5-hours.

When you have about half an hour to one hour left add in your coconut milk

Brown up some cauliflower rice, saute some fresh snow peas and garnish with fresh cilantro and a lime wedge

I had some Thai cashews on hand so I added them as a garnish too, great crunch (Trader Joes)
