Whole30 BKT (Bacon Kale and Tomato)
Looking for an easy, QUICK Summer salad idea?
I often look in the fridge to “see what’s left” from the week’s meals to see if I can squeeze out one more quick meal so that I don’t waste food or have to make ANOTHER trip to the market!
I had kale left over from a breakfast hash earlier in the week, grape tomatoes, and bacon; I always have bacon! I prefer the Whole30 approved Pederson’s Farms Bacon This salad could be served as a meal or as a quick side salad.
Whole30 BKT Salad (Bacon, Kale and Tomato) Wash and dry kale. Heat 2 tbsp of olive oil in a skillet. Add kale to the skillet and toss for about 5-minutes, then cover with a lid for 2-minutes. , you don't want it to cook but just steam and softened. Remove the kale from the pan and in the same pan crisp up the bacon. Remove the bacon from the pan and transfer to a paper towel. Add the tomatoes to the pan with the bacon grease and let the tomatoes blister but not too much that they completely lose their structure and color. Add all ingredients into a mixing bowl, add a drizzle with a little more olive oil, a squeeze of lemon and S&P to taste. Transfer from the mixing bowl into a beautiful serving dish and EAT! Enjoy!
