Squash Blossom Qs

We eat plants/veggies all the time but not so much the bloom from them. Introducing the Squash Blossom, coming to you from the Santa Fe, NM Farmers Market. As I walked into one of my favorite booths at the farmers market the owner laid these beauties out and I FELL IN LOVE! I looked like the heart eyed emoji.
SO, what can I make with these gorgeous rays of sunshine I asked, he wasn’t exactly sure but he mentioned a couple of ideas so I ran with it and they were AMAZING! You don’t find them often so when you do GRAB a couple dozen!
Squash Blossom Qs Dice or slice the sweet onion. Cut the stem end off the squash blossoms. In a skillet over medium heat, heat 2 tbsp of olive oil. Cook the onions until clear and they've started to caramelize. Once the onions start to caramelize add in 2 cups of fresh baby spinach, cover and turn down to low. Once the spinach starts to wilt, add a very light sprinkle of salt and mix with the onions, turn the heat off. In another skillet add 2 tbsp of avocado oil, let heat up over medium to high heat. Add one tortilla in the middle of the pan, sprinkle a little bit of cheese on it. Add a spoonful of the spinach and onions mixture on the cheese and spread the ends of the tortilla. Lay 4 squash blossoms in a circle with the stem end in the middle of the tortilla where the petals extend just past the edge of the tortilla. Add another sprinkle of cheese to hold the Q together. Once melted and crispy on one side flip to get the other side melted and crispy. Remove from the pan, let sit a minute or two and then slice into quarters with a pizza slicer. Repeat and MAKE MORE!
